Directory of Process Authorities

The regulation requires low acid canned food products to be reviewed by a process authority. A process authority is a qualified person who has expert knowledge of thermal processing requirements for low-acid foods packaged in hermetically sealed containers.  

21 CFR 114.83 Establishing scheduled processes.
The scheduled process shall be established by a qualified person who has expert knowledge acquired through appropriate training and experience in the acidification and processing of acidified foods.

The Association of Food and Drug Officials maintains a list of Process Authorities across the country. This is not an exhaustive list. You may be able to find Process Authorities in your area.  We suggest you check with your local Colleges and Universities.
